Dauphinoise Potatoes
Dauphinoise Potatoes Recipe
Dauphinoise potatoes is such a great dish to go with Beef Oxford and other roasted meat or poultry. It sounds complicated but it is very simple and can be prepared in advance or after the Beef Oxford has started to cook. Make sure that you don't have to much dauphinoise because it can over power the meal. Also make sure that you have something like steamed veg with it to lighten the meal up.
This Recipe serves 4 people
Use 4 good size potatoes.
500ml Double Cream
2 Cloves of Garlic finely chopped or crushed
Salt and Pepper
75g of Butter
Peel the potatoes and slice each one into 2-3mm slices. As you slice them add them to a dish with around 2 inch depth creating a layer of potato, make sure they slightly overlap.
On top of the first layer sprinkle salt and pepper and a little garlic, then add a little cream to cover potatoes.
Then repeat the last two steps until all the potatoes have been used. Make sure that you carefully push the layers of potatoes down as you stack them up.
Make sure that the cream isn't drowning the potatoes, then on the top layer put salt and pepper as the other layers and add a few knobs of butter.
Place into oven at around 160-180c for around 40-60 minutes, make sure the cream doesn't split, it would be better to put them on a lower temperature for longer than try and speed things up, towards the end check that the Dauphinoise potatoes are cooked by putting a knife through them, if they are nice and soft then they are cooked.
Variations & Menu options
If using double cream is to heavy, you could always use single cream or full fat milk.
As the original Dauphinoise potatoes recipe is very tasty by itself you could simply have this with a nice salad. It keeps well once cooked so you could have this option the next day it just needs to be re heated in the microwave.

It's a sturdy, easy to use bread maker that makes regularly shaped horizontal loaves, which most people prefer over the more common, vertical ones. I did find it odd that this breadmaker lacks a viewing window, a pretty standard feature on other bread makers. Given how little you can see through the prots of other models, however, I doubt you'll miss it.
Owner's love how durable the Panasonic breadmaker is. Of the more than 350 owner reviewers have rated the Panasonic SD-YD250 breadmaker at Amazon.com, more than 70% give it a top, 5-start rating. It consistently makes good bread. The only cons than reviewers at Epinions.com mention is that now they're eating more bread than ever before.
Many write that say they've used their machines for years. There are only a handful of complaints about breakage problems. While it's not the cheapest model of home bread maker, we often get what we pay for. I've had to replace more than one bread maker simply because I'd worn them out. In such cases, "inexpensive now" creates a false economy as you keep having to replace them. Given the Panasonic's record of durability, however, I'd say it's great choice.

If the Panasonic is a bit more than you need, or want to pay, the Sunbeam 5891 2-Pound Programmable Breadmaker may be your best option. It's a solid performer at a low price. Home cooks have praised it's ease of use and overall performance, as well as it's affordable price.
The Sunbeam 5891 is packed with all the basics you'd expect from a great bread maker: crust-color selector, regular baking and dough only cycles, you name it. Like most bread makers in it's price range, it makes a vertical loaf, rather than the horizontal one available in more expensive machines. It sports a good, no-frills approach with 12 preprogrammed cycles and, surprisingly, a jam cycle.
To be fair, I found a few complaints about its durability and many owners say the recipes in the manual could be better. A few reviewers have also complained about the LCD screen, saying it can be hard to read. In spite of these complaints, owners of the Sunbeam 5891, posting at Cooking.com and Amazon.com, awarded the Sunbeam bread maker a good over-all rating. The Weber Grill Light - My Favorite Accessory
Grilling After Dark
Why should something as simple as a Weber Grill Light be a favorite accessory? Where I live in Texas, we can grill year round. We'll have the occasional severe cold snap but for most of the winter it's just chilly but not really too cold to grill. I put on my big coat, get a warm drink and I'm good to go. However, it does get dark pretty early and by the time I get home from work the sun is going down. If I hurry, I can get the food on the grill using natural light but by the time I finish it is almost always dark.
The first few times I grilled in the dark I didn't do too well. I needed to check the food and I couldn't find a good way to hold my flashlight while using both hands. I tried holding the light between my arm and my body while using both hands but that did not work. Placing the flashlight beside the grill didn't work well either. I could not get it placed high enough to shine down on the food.
The next time I grilled I tried setting a desk lamp next to the grill and that didn't work either. The plastic parts of the lamp were not made to handle the heat a grill throws off and I did not want to ruin the lamp so I had to find something else. I tried a shop light but I had no place to clip on to high enough and close enough to the grill surface. At any rate, I found that having a an external light with an extension cord was quite a hassle. It increased my setup time and started to unnecessarily complicate what should be a simple process. What I needed was a light specifically made to work with my Weber Genesis Gold grill.
My Solution - The Weber 7516 Grill Out Handle Light
After doing some checking, I found the Weber 7516 Grill Out Handle Light. What a great little gadget this little Weber grill light is! It installed very easily and fit the handle of my grill perfectly. This Weber Grill Light works like a charm, even turning itself on and off as I open and close the grill lid. It uses 3 "triple A" batteries to power 3 LED's and provides plenty of light shining directly onto the grill grates, exactly where I need it.
I know it may seem silly to get so excited over something as simple as a light but believe me, if you ever need to grill in the dark, you need a grill light. I recommend this particular light very highly! The Weber Grill Light that I found is made for a specific set of Weber grills but Weber makes other lights for their other gas and charcoal grills.
And remember, there are grill lights made for just about every brand of grill made today. So if this particular light doesn't fit your grill, check out the other lights. If the manufacturer does not make a light to fit, there are generics that you can use. Most all will work better than any homemade contraption! I'm sure you will find something that will work for you too.

Roast and steaks should be firm. Do not purchase soft or squishy feeling roast or steaks no matter the type of meat.
Check the sale by date and no buy after that date. You should buy the meat either before or on the day that is the "sell by date".
Check the packaging for any type of damage. The meat should be cold and wrapped securely.
The package should not contain any moisture. This could mean that the temperature of the meat has been above 40 degrees and that will cause the taste of your meat to be less quality.
Look for beef that is bright red in color and has thin creamy white fat evenly distributed throughout the roast or steak. On the other hand, veal should not be bright red; it should be almost white in color or lightly pink.
Before you buy any meat find out if it has been injected with flavorings. You do not want to purchase any meat that has been injected with flavorings, this can cause your meat to break down and become mushy.
Do your own tenderizing. Do not buy meat that has been tenderized by the butcher. He uses piercing products that allows the natural flavor and juices to escape from your meat and this will be produce a tough and un-flavorful meal. Try to purchase dry aged if at all possible. This type of meat will probably only be found at a butcher shop. Dry aging is a process where the meat is taken from the bag that it arrives in to the butcher and is hung in a cooler for a certain amount of time to dry out. This will make the cost go up, but the aging adds more flavor and also tenderizes the meat. If you buy your steak from the local grocery, the steak has been cut, wrapped in plastic and has aged on the way to the store.
